• 2 cup Whole Wheat Flour
  •  1 cup Fine Sooji
  •  1 tsp Salt
  •  Warm water for kneading the dough
  • Oil for frying

Instructions

  • Mix all the dry ingredients in a bowl.
  • Knead the dough by adding warm water, add a little water and mix then add more. the dough should not be soft.
  • Cover the dough and set aside for 20 minutes.
  • knead the dough again, do not add more water.
  • Divide dough in 2 parts, if you have large space to roll it on other wise divine in four parts.
  • Make dough balls and roll on floured surface, it should be very thin, like corn tortillas.
  • Using a cookie cutter or a Jar lid that is approx 2.5 inches in diameter, cut circles on the rolled dough.
  • Heat oil in a deep frying pan.
  • Once the oil is hot, reduce the heat to medium.
  • Slide the puri into the hot oil and fry until they puff up and become golden brown.
  • Gently press the poories with the back of the ladle. 
  • It will help to puff them up.
  • Flip the puri and fry from other side as well.
  • Remove the puri on a plate lined with kitchen towel.
  • Fry all the puri in the same manner.
  • Cool them and store in an airtight container.
